Blåbärs och vaniljbullar

Mamma ville inte ha något att äta igår, det enda jag lyckades fresta henne med var en piggelin och jordgubbar.

Men när hon tänkte efter så var hon minsann sugen på pizza och mina smörbullar.

Så nu har jag bakat och är redo att åka dit med dessa frestelser i bagaget.

Äter hon inte det då vet jag inte vad jag ska locka henne med.

Blåbärs och vaniljbullar

Till ca 30 bullar:
25 g jäst för söta degar
100 g smör
2,5 dl mjölk
1 st ägg
1 krm salt
1 dl strösocker
1 tsk malen kardemumma
7-8 dl vetemjöl

Blåbärsfyllning:
100g riven mandelmassa
2-3dl blåbärssylt
75g smör
1msk vaniljsocker

Vetedegen: Smula ner jästen i en bunke. Smält smöret i en kastrull. Häll på mjölken, rör om och låt bli fingervarmt, 37 grader. Eftersom smöret är varmt när det har smält så blir det oftast den temperaturen direkt när du blandat ner mjölken. Häll lite av degvätskan över jästen och rör tills den har löst sig. Häll därefter över resten av degvätskan. Tillsätt ägg, salt, strösocker och kardemumma och rör om så att ägget fördelar sig. Tillsätt därefter mjölet, lite i taget. Använd gärna elvisp med degkrokar. Kör tills du arbetat in det mesta av mjölet och degen släpper bunkens kanter. Lägg en bakhandduk över bunken och låt jäsa ca 40 minuter.

 

Fyllningen: Blanda smör, mandelmassa, vaniljsocker och blåbärssylt i en liten bunke. När degen jäst färdigt tar du upp den på bakbordet och knådar den ordentligt och delar den i två delar. Kavla ut varje degdel till en rektangulär platta, ca 30×55 cm. Bred på fyllning. Rulla ihop degen på längden och skär i 2 cm breda skivor och lägg dessa i bullformar och ställ dem på plåtar. Strö över lite kokosflingor och pärlsocker efter tycke och smak. Låt bullarna jäsa under bakduk ca 15 minuter. Grädda sedan bullarna mitt i ugnen i 225 grader i ca 10-13 minuter. Låt svalna under bakhanddukar.
